Easy Choco-Oat Bars

What you need:

  • 3 cups quick cooking oats
  • 1 cup semi-sweet chocolate chips
  • 1 cup butter
  • 1/2 cup peanut butter
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract

In a saucepan over medium heat, melt the butter and then add the brown sugar and vanilla. Add the quick cook oatmeal, reduce the heat to low, and cook for 2-3 minutes. Remove from heat and press half of cooked oatmeal into a 9×9-inch greased pan. Reserve the remaining oats for coverage. In the same saucepan, add the chocolate chips and peanut butter and melt over low heat, stirring frequently. Stir until mixture is smooth, then pour over pressed oats in skillet. Using the back of the spoon, spread the mixture evenly.

Cover the chocolate layer with the reserved oatmeal, pressing gently. Cover and refrigerate overnight. When ready, place it at room temperature for a few minutes before cutting it into bars.
