Tropical salmon BBQ
What do you need:
1/2 kilogram of fresh salmon fillets, cut into 1/2 inch strips
1 zucchini, cut into 1/8-inch pieces
1/2 cup of white wine vinegar
2 tablespoons minced fresh dill
2 teaspoons of fresh lemon juice
1/2 teaspoon grated lemon zest
Salt and ground black pepper to taste
Combine white wine vinegar, dill, lemon juice, and lemon zest in a large zip-top bag. Add the salmon fillets to the bag and shake to coat with the marinade. Seal and refrigerate for 30 minutes only (vinegar will cook salmon if marinated longer). When ready, skewer salmon pieces on skewers, alternating with zucchini. Season with salt and pepper, then cook on a preheated grill over medium heat, turning constantly, until cooked through, about 8 to 10 minutes.
Delicious grilled chicken beer
What do you need:
1 roast chicken
1 can of light beer
1 1/4 cup chili sauce
3/4 cup of molasses
2 tablespoons Dijon mustard
1 1/4 tablespoons lemon juice
1 tablespoon of hot sauce
1 tablespoon of chili powder
1/2 tablespoon of liquid smoke
Pour half the contents of the beer can into a container and set aside. Insert the can into the chicken cavity, and then place the chicken on a large aluminum roasting pan. Cook on a preheated grill over medium heat, covered, for 45 minutes. Meanwhile, mix chili sauce, molasses, Dijon mustard, lemon juice, hot sauce, chili powder, and liquid sauce in a bowl. When the chicken is done, drizzle generously with the sauce mixture. Roast the chicken for another 45 minutes. Pour remaining sauce into skillet and simmer until reduced by half, about 20 minutes. When the chicken is done, remove it from the grill and cut it into slices. Serve with sauce for dipping.
